Fun da-middles Birthday Cupcakes!

Later this year, you’ll see Betty Crocker Fun da-middles cupcake mixes on shelves at your grocery store- however I was given the chance to try them now, and tell you all about them. They say you’ll never need to frost cupcakes again with these, because it’s what is on the inside that matters. And what’s on the inside of these cupcakes is a creamy filling!

I received a box of vanilla cupcakes with vanilla filling, but there are also two other combinations that include chocolate- vanilla cupcakes with chocolate filling and chocolate cupcakes with vanilla filling. I can’t wait to try the chocolate filling, because I love chocolate frosting so much more than vanilla.

Don’t mind my ghetto muffin tin. Somewhere between the old house and the new house we seem to have misplaced mine. I had to compromise and make my own out of our silicone cups I’d bought for bento lunches- that are pink and red hearts. I wanted to use the festive party papers I bought for the twins, so I popped them into the silicone ones anyway.

Also, anyone who knows me, knows that I don’t always follow directions when it comes to baking (and just about everything else. I decided to bake up our box of Fun da-middles for the twins’ birthday, and wanted to make them special, so I added food coloring to the yellow cake mix.

To prepare them, you just make the cake like a typical box mix by adding oil, eggs and water. You fill the cupcake pan about 1/3 of the way full with batter, and then open the filling pouch and squeeze some into each one, being careful to keep it in the middle and not to get it on the sides. After that, just add the rest of the batter on top. I’d made the batter two different colors and used one on the bottom and one on the top of the filling.

step6helperMy baking assistant during this whole process took a nap.  It probably made him more helpful than he would have been awake.

step8After the cupcakes cooled, I added more frosting.  (Remember what I said about following directions?)  I put #2 candles on two of them for the boys for tomorrow. I just know they are going to love them!

The insides look so cool, and I think the colors came out great.

    I love those! I would love to bake them for my little girl who was just telling me all the things daddy wanted to do with her on her next birthday. He was called home to heaven a week ago, and birthdays are going to be tough :(

    OMG these look awesome! They would be perfect for the Hurricanes end of year party w/orange and black food coloring w/white icing in the middle! (our colors) How long til ya think they are in the stores??

    These look cool! Lee loves cupcakes, so I bet he would LOVE these…his birthday is coming up, so it would be awesome to have these for his birthday!

    I love cake decorating and making cupcakes! If I won, I think it would be a fun project for my 2 bigger girls to do with me. We would make them for Daddy because he has a major sweet tooth!

    Oh my gosh, were they yummy? We don’t get those here but they sound easy enough – I wonder if chocolate pudding would work inside – no way to know unless i try, right? :)

    What a great idea and yours look really good. I could probably eat an entire batch myself but I guess the right thing to do is to share. Don’t need a special occasion for cupcakes (or any sweet) just any old day is a good reason.
