Yesterday I baked a batch of cupcakes for the barbeque we attended. Inspired by Bake It in a Cake and the extra package of Oreos I’d bought with my coupons, I decided to bake cookies in each cupcake.
They came out amazing- I put a bit of batter in the bottom, added an Oreo, and then filled it the rest of the way up. I topped them all with chocolate chip frosting that Aaron picked out. I meant to get a photo of the inside of them at the barbecue last night, but those Marines inhaled them before I had a chance!
Mine were Double Stuff Oreos, not peanut butter. I also don’t decorate nearly as nice as she does. But they sure tasted fabulous!
I made one batch, which means I had a lot of left over batter and cookies. I suppose I should have made another batch, but instead I threw the leftovers into an 8×8 pan. I tried to layer it but I think things floated around during baking. It’s definitely better looking with just one cookie in a cupcake than a dozen in a square cake.

It still tastes great though! The red is from sprinkles… the girls like to to put sprinkles in my cake batter because then it’s like the Funfetti mixes.
*ETA! I found a lone cupcake that escaped the Marines (probably because it had flipped upside down in the carrier and the frosting was all smeared). I attempted to put the frosting back on so I could snap a photo for you all!

Now I just have to schlep out to the store today to get all the ingredients to make cupcakes! I may seriously have to try to make some of those peanut butter ones! Yuuum.
