You guys know about my blogging mom inferiority complex already. If not, go ahead and click the link. While I’d love to be that slender, fashionable mom who bakes organic cupcakes for the children of the neighborhood to snack on during organized craft time where the kids turn recycled objects into pieces of art that they auction off and donate the money to the homeless, all while wearing heels and make up… I will never ever be that woman.
So I thought I’d share a secret with you- one of the ways I achieve the appearance of being a super mom- so that you can do it too!
Here’s what you’ll need:
- 20 minutes, 15 of which you can do something else, like play a game on Facebook.
- 2 packages of Martha White muffin mix
- A 12 cup muffin tin
- A mixing bowl
- A spoon
- 1 cup of milk
- 12 muffin papers
Directions:
After the kids go to bed, combine muffin mixes and milk in the bowl with the spoon. Pour into the muffin tin that you’ve lined with the papers. Bake for 15 minutes. Toss hot muffin tin with cooked muffins on the counter and go to bed.
In the morning, when the kids wake you up and ask you what’s for breakfast, tell them there are muffins on the counter. Roll over and go back to sleep. Later on, accept praise and accolades for the amazingly delicious special breakfast you made for them.

I do make muffins but have to make them from scratch (food allergies). Also, no kids so I get to eat them all. I put them in individual plastic ziploc containers and stack them in the fridge. My muffin pan makes 9 muffins, so I make muffins once every 9 days!
